Cocoa Almond Dates
So quick to make! Dates, cocoa, and almonds are the perfect taste trio, each enhancing the other ingredients' flavors. Because I am a big fan of the slightly bitter flavors of dark chocolate, I love these without any extra sweetener, taking advantage of the natural sweetness of the dates. Nonetheless, a small amount of honey or agave nectar can be added to the chocolate filling if you need them sweeter.
- 4 Medjool dates, cut in half lengthwise, pits removed
- 1 tablespoon unsweetened cocoa powder
- 2 teaspoons boiling water
- 1/2 teaspoon honey or agave nectar) optional
- 8 roasted almonds
In a small bowl, add 2 teaspoons boiling water to the unsweetened cocoa powder, stirring vigorously to make a chocolate paste. Add honey or agave nectar if a sweeter flavor is desired. Stuff date halves with chocolate paste and top with a roasted almond. That's it!
