Almond Agave Cookies

Makes 1 dozen, 2" round cookies

Dry ingredients

  • 1/2 cup almonds
  • 1/2 cup rolled oats
  • 1/2 cup coconut flakes
  • 1/2 cup whole wheat pastry flour
  • 1/2 teaspoon Maldon salt or other type of flaky finishing salt (not regular salt)

Liquid ingredients

  • 1/2 teaspoon natural orange flavor
  • 1/4 cup canola or other mild-flavored oil
  • 1/3 cup dark agave nectar

Preheat oven to 325°F. Grind almonds, rolled oats, and coconut separately in a blender or food processor into a fine, flour-like texture.

In a medium-sized bowl, combine ground almonds, oats, coconut, pastry flour, and flaky salt. In a smaller bowl, mix together orange flavor, oil, and dark agave syrup. Add liquid ingredients to the dry ingredients and stir until dough I moistened. Forming balls from the cookie dough that are approximately 1 inch in size, flatten each with a fork onto an oiled cookie sheet.

Place cookies in the oven and bake approximately 12-15 minutes until golden brown. Allow to cool on a wire cooling rack. Then enjoy!
