Peanutty Teff Cookies
Makes 24 cookies
- 1/2 cup roasted peanut splits
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/4 cups teff flour
- 1/2 cup barley flour or whole wheat pastry flour
- 1/4 cup canola oil
- 1/3–1/2 cup rice syrup or honey
- 1 egg, slightly beaten
- 1/2 teaspoon vanilla
Preheat oven to 350°F. Combine peanuts, soda, salt, and flour. In a separate bowl, beat oil and sweetener together. Add egg and vanilla and beat well. Fold into flour mixture. The dough should be very stiff; add extra flour if necessary. Drop dough by rounded teaspoonfuls onto oiled cookie sheets. Using a for, press cookies to about 1/2 inch thickness. Bake for 12–15 minutes or until bottoms are golden. Remove and cool on a wire rack.
