Oil-free Dressings

Oil-free dressings, substituting nuts/seeds or nut butters, are really delicious and very easy to create. They are more healthful, too. While oil is 100% fat, in addition to essential fatty acids, nuts provide fiber, vitamins, minerals, antioxidants and a high level of plant sterols-naturally occurring components of plant cell membranes that help block the absorption of dietary cholesterol.

Gingery Orange-Pecan Dressing

Makes about 1/2 cup

  • 4 tablespoons orange juice
  • 1/4 cup roasted pecans
  • 2 tablespoon finely grated carrots
  • 1/2 teaspoon finely grated fresh ginger

Blend all ingredients in a blender and serve or refrigerate and use within 2-3 days. This is great on all types of salads, cooked vegetables, beans, and grains.


Lime-Tahini Dressing

Makes about 1/2 cup

  • 2 1/2 tablespoons fresh lime juice (juice from 2 small limes)
  • Lime zest from the fresh lime
  • 2 1/2 tablespoons sesame tahini
  • 1/2 teaspoon freshly grated ginger
  • 2 1/2 tablespoons water or apple juice

Blend all ingredients in a blender and serve or refrigerate and use within 2–3 days.
