Tofu "Mayonnaise"

Makes 1/2 cup

  • 4 ounces soft fresh tofu (first boil in water for 5 minutes and cool)
  • 1 tablespoon lemon juice
  • 1 teaspoon brown rice vinegar
  • 1 tablespoon olive oil
  • 1 teaspoon canola oil
  • 1/2 teaspoon prepared stoneground mustard
  • 2 teaspoons mellow miso or 1/4 teaspoon sea salt

Fill pot with enough water to immerse the block of tofu and place over high heat. After it comes to a boil add tofu and cook for 5 minutes. Remove tofu, rinse in cold water and let cool before proceeding with recipe.

Combine all ingredients in a food processor or blender and blend thoroughly until smooth.
